Executive Chef - Patina Restaurant

Paul Lee is a Taiwanese-born, Orange County native who brings to Patina a wealth of fine-dining experience acquired by having worked alongside some of the most acclaimed chefs at Michelin-starred restaurants from across the country.

Lee's culinary story began at home at the age of 10 under the tutelage and disciplined guidance of his grandmother, teaching him the cornerstone lessons on how to hold a knife and the importance of seasoning. He attended the Le Cordon Bleu Pasadena, and obtained the position of chef de partie at the famed L'Orangerie restaurant in Hollywood, CA, just before graduation.

This was the beginning of a career defined exclusively by working in the country's top rated kitchens next to culinary legends such as Chef Pugin and as sous chef for Joel Robuchon at L'Atelier. Most recently his experience has extended internationally having completed a stage at three Michelin star restaurant Martin Berasategui in San Sebastian, Spain, prior to joining Patina.

Lee brings a fresh perspective to Patina, thanks to his finesse for classical French techniques and artful presentations, combined with his penchant for bold flavors inspired by a lifelong exposure to an array of diverse cultural cuisines.
HOURS

Open for dinner Tuesday through Sunday from 5:00pm to 9:30pm. We also offer post-theater dining on LA Philharmonic performance nights. Our last seating occurs 30 minutes after the performance ends.
